Ingredients
- Ingredients for mascarpone ice cream
- 655 g fresh whole milk
- 15 g dextrose
- 165 g sucrose
- 125 g fresh mascarpone
- 35 g skimmed milk powder
- 5 g neutral flavouring
Procedure
1. Place the almonds in an oven preheated to 170°C for about ten minutes, taking care not to toast them excessively.
2. Leave them to cool and, while still warm, place them in a powerful food processor and blend for about 15 minutes until you obtain a smooth paste.
3. Place the almond paste in the container of a hand blender together with the cream, milk, sugar and honey and blend (you should obtain a smooth mixture and the sugar should be completely mixed in). Pour the mixture into your ice cream maker, turn it on and allow your almond ice cream to reach the desired consistency.
